Moist and Juicy Steamed Chicken Breast. 1 large boneless chicken breast, about 250-300g or 9 to 10.5 oz
1 slice fresh Ginger (or try a bay leaf)
1 green onion top or 1/4 onion sliced
1/2 tsp salt
50 ml white wine or sake (a bit less thatn 1/4 cup)
to taste Pepper.
It's not necessary, but I usually cut a couple of shallow slices, or poke holes into to the thickest parts of the breast to help make sure the heat reaches through the entire piece.

Add onion tops, ginger and chicken skin-side down to a heavy pot. Sprinkle in salt and pour in the sake or wine.

Cover with lid and heat on medium heat. When it starts to simmer, turn heat to low and let cook for 5-6 minutes.

After 5 minutes, turn off heat and let the pot sit as is, with the lid on. It usually takes 10-15 minutes for the chicken to finish, depending in how big the breast is and whether or not you cut small slices in it.

Cut into the thickest part to make sure the chicken is cooked. If it's still too pink, recover pot and let sit for a few more minutes. (or steam for another 1 minute)Once it's done, slice into pieces or pull apart with fingers. Sprinkle on some pepper if you like. You can eat right away or save any chicken that you don't use right away in the refrigerator for a couple of days! To keep it moist, save the chicken along with the juices from the pot.

Italian chicken!!! It's by far a favorite in my household. You'll need boneless skinless chicken breasts, Italian dressing, onion powder, and chopped dried onions. You'll want to season the chicken with the onion powder and chopped onions and let it soak in the dressing (the longer the better) then grab your favorite baking dish cover the bottom of the pan in It dressing, add the chicken some more onion mixture, and cover in more it dressing (make sure chicken is covered for best results) bake at 375 for about an hour best served with a side of cheesey rice and be sure to eat chicken covered with the dressing on it

Chicken and stuffing in the crockpot.

Pour your stuffing in the crock pot. Stir in cream of chicken soup. Add your chicken breasts. After the chicken is done shred it and stir through. So good!

King Ranch Chicken

(look this one up)
But it is layered tortillas, chicken, cream of chicken soup, ro-tel, cheese... (add onion or olives, etc.

Chicken Salsa Verde

- enchilada sauce, salsa verde, cheese, chicken, sour cream. Look this one up too.

Give them all a try!

If you want to cook a whole chicken in the oven, I cut up apples and put it in the pan and I baste it with apple juice. Keep it moist and wrapped in foil. Oven about 350. Very tender and a lot of flavor. Mix it up and add onion chopped up too.
